Elizabeth McCall is one of just three people — and the first woman — to hold the title of Master Distiller with Woodford Reserve. She recently visited the Aria in Las Vegas, where Cathédrale is now serving a decadent Mishima Reserve wagyu tomahawk, flambéed with a special edition of the spirit. McCall had a few thoughts to share on trends in the industry while trying out the steak.

Are you seeing more women gravitate away from vodka and towards bourbon and whiskey in general?

“Yes. Women have great, sophisticated palates, and we enjoy sophisticated spirits. We’re really driving that increase in popularity. Bourbon is very complex and women are complex — in the very best ways.”

If you were stuck on a desert island and you had a choice between a bottle of bourbon or rye, what would you pick?

“I would take our bourbon. It’s over 51% corn, so it’s going to have more sweetness, a little bit of spice, and a more well-rounded flavor. Our rye is 53% rye, so it’s shifted more towards spice. It’s kinda out-of-balance. But rye is one I enjoy drinking neat or on the rocks.”

Woodford Reserve is the official bourbon of the Kentucky Derby and often credited with rejuvenating the popularity of the Mint Julep. What’s the best way to make the cocktail?

“For me, personally, it's much more whiskey forward. It has that sweetness of simple syrup, but not too much of that. And it's definitely not over-minted. I prefer wiping the inside of the glass with the mint and not muddling it, because that can make it a little too acidic. And of course, add a beautiful fresh sprig of mint as garnish to take in the aroma as you're serving the drink.”
